This lightning-fast smoothie makes a great breakfast or mid-afternoon pick-me-up. You can substitute any canned fruit packed in its own juices for the pineapple.

Ingredients

canned pineapple packed in juice

16 oz, chunks, undrained

frozen orange juice concentrate

6 oz

light unsweetened coconut milk

½ cup(s)

ice cube(s)

1 cup(s)

Instructions

  1. Combine ingredients in a blender and purée until smooth, adding more ice cubes if necessary to create a thick purée. Pour into 4 tall glasses and serve. Yields about 1 cup per serving.
