Pecan-Spiced Sweet Potato Mash

Here’s a starchy side that has both sweet and spicy notes. Finely chop the nuts to help evenly spread them throughout the dish.
Ingredients

uncooked sweet potato(es)

3 pound(s)

packed light brown sugar

1½ Tbsp

unsalted butter

1 Tbsp, melted

pumpkin pie spice

1 tsp

kosher salt

½ tsp

chopped pecans

6 Tbsp, toasted

Instructions

  1. Preheat oven to 425°F. Place potatoes on a baking sheet and roast until soft, about 1 hour; remove from pan and let cool 15 minutes.
  2. Slice potatoes in half and scoop flesh into a large bowl; discard skin. Add sugar, butter, pumpkin pie spice and salt to bowl; coarsely mash to combine ingredients and then fold in pecans. Yields about 1/2 cup per serving.
