Pecan-Spiced Sweet Potato Mash

Here’s a starchy side that has both sweet and spicy notes. Finely chop the nuts to help evenly spread them throughout the dish.
uncooked sweet potato(es)3 pound(s)
packed light brown sugar1 ½ Tbsp
unsalted butter1 Tbsp, melted
pumpkin pie spice1 tsp
kosher salt½ tsp
chopped pecans6 Tbsp, toasted
- Preheat oven to 425°F. Place potatoes on a baking sheet and roast until soft, about 1 hour; remove from pan and let cool 15 minutes.
- Slice potatoes in half and scoop flesh into a large bowl; discard skin. Add sugar, butter, pumpkin pie spice and salt to bowl; coarsely mash to combine ingredients and then fold in pecans. Yields about 1/2 cup per serving.
