This autumn-inspired puree is a delicious change of pace from applesauce or potatoes. It's made with cooked-down parsnips and pears, low-fat buttermilk, and ground cardamom. All the ingredients are quickly blended in a blender or food processor, and this hearty, perfectly spiced accompaniment to any fall meal is ready to go. You may enjoy it so much that it could find its way onto your Thanksgiving table as a unique and tasty side. It's easy to scale up as well if you're having a bunch of people over for dinner.

Ingredients

Uncooked parsnip

4 medium, trimmed, peeled and diced

Pear

3 medium, cored, seeded and diced

Water

¼ cup(s)

1% low fat buttermilk

3 Tbsp

Ground cardamom

Table salt

¼ tsp, or to taste

Black pepper

¼ tsp, or to taste

Instructions

  1. Combine pears and parsnips in a small pot; add 1/4 cup of water. Bring to a boil, then reduce heat to low, cover and cook until parsnips are very tender, about 15 minutes; drain off any liquid.
  2. Place pears and parsnips in a blender or food processor fitted with a steel blade. Add remaining ingredients and process until mixture is lightly pureed. Yields about 3/4 cup per serving.
  3. Serving size: about 1/2 cup
