Think of these savory bites as the WeightWatchers® version of the French gougères. Jumping off from a base of our two-ingredient dough (self-rising flour and fat-free Greek yogurt), we add sharp cheddar, Parmesan, and cayenne pepper for a flavor that’s similar to cheese straws or cheese crackers. A slice of pimento-stuffed olive provides the eyeball look, as well as a hit of briny-salty flavor. Brushing the dough with egg white helps the olive adhere and creates a crispy, shiny outer shell.

Ingredients

Self-rising flour

Reduced fat cheddar cheese

Grated Parmesan cheese

1 large, lightly beaten

Pimiento stuffed olives

4 olive(s), each cut into 4 slices

Instructions

  1. Preheat the oven to 425°F. Line a large sheet pan with parchment paper.
  2. In a medium bowl, stir together the flour, cheddar, Parmesan, and cayenne. Add the yogurt and stir with a wooden spoon until just combined. Knead the dough in the bowl with your hands until smooth, 1 to 2 minutes. Divide the dough into 16 equal pieces, rolling each piece into a ball.
  3. Arrange the dough balls on the prepared pan. Brush each dough ball with egg white and top with 1 olive slice; press olive to slightly flatten the ball. Bake until lightly browned, 10 to 12 minutes.
  4. Serving size: 1 cheese puff
