Olive "Eyeball" Cheese Puffs
Reduced fat sharp cheddar cheese made with 2% milk
⅓ cup(s), shredded
Grated Parmesan cheese
Plain fat free Greek yogurt
1 large, lightly beaten
Pimiento stuffed olives
4 olive(s), each cut into 4 slices
- Preheat the oven to 425°F. Line a large sheet pan with parchment paper.
- In a medium bowl, stir together the flour, cheddar, Parmesan, and cayenne. Add the yogurt and stir with a wooden spoon until just combined. Knead the dough in the bowl with your hands until smooth, 1 to 2 minutes. Divide the dough into 16 equal pieces, rolling each piece into a ball.
- Arrange the dough balls on the prepared pan. Brush each dough ball with egg white and top with 1 olive slice; press olive to slightly flatten the ball. Bake until lightly browned, 10 to 12 minutes.
