Sliced nectarines are baked to perfection beneath an amaretti cookie topping. The majority of the the cook time for this recipe is hands-off: The nectarines bake for about 45 minutes, giving you plenty of time to do whatever else you need to do. Make this effortless dessert even better with a scoop of light vanilla ice cream. You can also use any stone fruit, so feel free to experiment with whatever you have on hand: Peaches, apricots, plumcots and plums all work well.

Ingredients

Nectarine

7 item(s), medium, thinly sliced (about 8 to 10 slices per nectarine)

Liqueur

½ fl oz, almond flavor suggested, or 1 floz

Amaretti cookie

7 cookie(s), processed into fine crumbs

Unsalted butter

5 Tbsp, melted

Instructions

  1. Preheat oven to 375ºF.
  2. Place nectarines in an ungreased round baking dish; toss with liqueur. Spread nectarines into an even layer and top with cookie crumbs; drizzle melted butter over top.
  3. Bake until fruit bubbles, about 45 to 50 minutes. Allow to cool; serve either warm or cold. Yields 1 slice per serving.

Notes

You can use light butter in this recipe but we like the taste of regular butter better and decided that for 1 1/2 teaspoons of butter per serving, it's worth using the real thing.
