This Halloween riff on avocado toast features mini rice cakes spread with mashed avocado and topped with ingredients to create witch and one-eyed monster faces. They’re best served shortly after assembling, but you can get a head start by cutting the nori into witch hat shapes, julienne-cutting the carrot, slicing the cheese stick, and having the sesame seeds and capers at the ready. For a more 3-D effect with the witch faces, arrange the carrot noses so that they stick up out of the avocado mixture.

Using a rice cake as a sizing guide, cut the nori sheet into witch hat shapes to yield at least 8. Arrange the carrot, sesame seeds, capers, and cheese close to a work surface. In a medium bowl, mash the avocado with lime juice and salt. Spread the avocado mixture evenly over the rice cakes.

For each witch, arrange 3 or 4 carrot pieces on either side of a rice cake to form the hair; top with a nori witch hat. Arrange 2 sesame seeds for the eyes. Trim a carrot piece to about ¼-in, and place in the avocado mixture to form the nose.

For each one-eyed monster, arrange a few carrot pieces on the top of a rice cake to form the hair. In the middle of the rice cake, place 1 cheese slice; top with 1 caper.
