Minty pineapple-mango slush

Icy cold and loaded with vitamins, this fruit slush is the perfect summer pick-me-up, and it’s ready in just 10 minutes. Refrigerate the ingredients before blending to produce an ultra-cold drink. When buying pineapple, look for fruits with a sweet aroma and golden outer skin, which are good signs that the pineapple is at or nearing peak ripeness. Very green pineapples can be a good choice if you know you won’t be using them for a few days. For mangos, ripe ones will give a little when gently pressed, and some may give off a sweet aroma. But disregard skin color; it is not an indicator of ripeness.
1 cup(s), chunks (very ripe and cold)
1½ large, or 1 medium mango, peeled, pitted and cubed (very cold)
Unsweetened orange juice
¼ cup(s), reserve 2 sprigs for garnish
- Place all ingredients into a blender, and blend until slushy. Pour into 2 tall glasses; garnish with mint and serve. Yields 1 1/2 cups per serving.
