Small and sweet, green peas anchor this easy six-ingredient dip that’s perfect for a party or for an afternoon snack. We’ve served it with chilled green beans, but you can pair it with pita or other sliced vegetables. The feta cheese gives it richness and some tanginess, while the mint adds a refreshing coolness that pairs wonderfully with the peas. When selecting mint, make sure to choose mint with bright green leaves with no signs of wilting. To cook the green beans, bring a large pot of lightly salted water to a boil. Add the green beans, return to a boil, and cook 5 minutes or until crisp-tender. Then plunge the green beans into a bowl of ice water, and drain before serving.

Frozen green peas

Crumbled feta cheese

Fresh mint leaves

Fresh lemon juice

Scallions

Cooked green beans

Instructions

  1. Combine peas, feta, water, mint, and lemon juice in food processor; pulse until chunky. Spoon into small bowl and sprinkle with scallion. Serve with green beans.
