Enjoy a lighter take on a classic fried fish sandwich in this mini package that doesn’t come up short in either flavor or texture. The seasoned cracker mixture helps mimic the crunch of fried batter, crisping and browning in the skillet as the fish cooks through. Cod has a mild, delicate flavor and a dense, flaky texture, which works well in these sandwiches. Try to keep the pieces of fish consistent in size and thickness so that they cook evenly. We have called for store-bought tartar sauce for the convenience factor, but you can also stir a homemade one together quickly with mayonnaise, pickle relish, lemon juice, Worcestershire, and dried dill.

Ingredients

Uncooked Atlantic cod

1 fillet(s), (about 3/4 pound)

All-purpose flour

¼ cup(s)

1% low fat buttermilk

½ cup(s)

Whole-wheat crackers

6 oz, (about 3/4 cup), crumbs

Fresh parsley

1 Tbsp, finely chopped flat-leaf

Table salt

¾ tsp

Garlic powder

¼ tsp

Olive oil

2 tsp

Whole wheat dinner roll

4 item(s), mini hamburger variety, split

Tartar sauce

¼ cup(s), prepared

Lemon

½ item(s), medium, cut into 4 wedges

Instructions

  1. Cut fish into 4 equal pieces. Put flour on sheet of wax paper and pour buttermilk into large shallow bowl. Mix together cracker crumbs, parsley, salt, and garlic powder on another sheet of wax paper. Coat each piece of fish with flour, shaking off excess, then dip both sides into buttermilk and then into crumb mixture until coated, pressing lightly so it adheres.
  2. Heat oil in medium nonstick skillet over medium heat. Add fish and cook until crust is golden and fish is just opaque in center, about 4 minutes per side. Put piece of fish in each roll. Serve with tartar sauce and lemon wedges.
  3. Per serving: 1 sandwich and 1 tablespoon tartar sauce
