This juicy, refreshing salad is a fabulous addition to any summer meal. Serve it as a side dish or a light dessert. Some other perks: It is incredibly easy to prepare, uses just seven ingredients, and takes just 12 minutes to complete. The cooling flavors of honeydew, cucumber, and mint work beautifully together, but you could substitute cantaloupe for the melon, if you like. We called for peeling the cucumbers, but English cucumbers have such thin skin that you don’t have to peel them if you don’t want to, or if you need to get this salad ready even more quickly.


Honeydew melon

1 large, chopped (about 4 cups)

English cucumber(s)

1 medium, peeled, chopped (about 2 cups)

Uncooked scallion(s)

4 medium, thinly sliced (about 1/2 cup)

Plain fat free yogurt

2 Tbsp

Fresh lemon juice

2 Tbsp


2 Tbsp, leaves, chopped

Table salt

1 tsp


  1. Toss all ingredients together in a large serving bowl. Serve at once or cover and refrigerate for up to 2 days. Yields about 1 cup per serving.
