Melon and cucumber salad
1 large, chopped (about 4 cups)
1 medium, peeled, chopped (about 2 cups)
4 medium, thinly sliced (about 1/2 cup)
Plain fat free yogurt
Fresh lemon juice
2 Tbsp, leaves, chopped
- Toss all ingredients together in a large serving bowl. Serve at once or cover and refrigerate for up to 2 days. Yields about 1 cup per serving.
