London broil with sweet onions and peppers

This easy seven-ingredient meal is all prepared on the grill, and it’s ready in 30 minutes. We’ve grilled the lemons here too. It not only heats them up, which allows them to easily release their juices, but the slightly smoky and sour flavor adds something special to this meal. Round out this hearty steak dinner with baked potatoes topped with sour cream and sprinkled with chopped fresh chives.

Cooking spray

Uncooked lean trimmed sirloin beef
1 pound(s)
Taco seasoning mix
4 tsp
Red bell pepper
1 medium, cut into 4 large wedges
Yellow bell pepper
1 medium, cut into 4 large wedges
Red onion
2 medium, thickly sliced
Lemon
½ item(s), medium
Fresh parsley
¼ cup(s), flat leaf, chopped
Instructions

Spray grill rack with nonstick spray. Preheat grill to medium or prepare medium fire.

Sprinkle steak with 2 teaspoons of taco seasoning. Sprinkle bell peppers and onions with remaining 2 teaspoons seasoning. Lightly spray bell peppers, onions, and cut side of lemon with nonstick spray. Place steak, vegetables, and lemon (cut side down) on grill rack and grill until vegetables and lemon are browned and instant-read thermometer inserted into side of steak registers 145°F, about 5 minutes per side.

Transfer steak to cutting board and let stand 10 minutes. Cut against grain into 16 slices. Sprinkle vegetables with parsley and squeeze lemon juice over; serve with steak.
