This fun, refreshing drink is the perfect prescription on a sweltering day. This 10-minute recipe easily doubles or triples if you are serving a crowd, or just keep a big pitcher of the mint and sugar mixture in your refrigerator so you can fix one for yourself any time that you like. You will want to add the seltzer just before serving it so that you do not lose any of those wonderful bubbles. When buying mint, look for leaves that are evenly colored and free of brown spots. They should smell fragrant and they should not look wilted or dry.

Ingredients

Sugar

½ Tbsp

Fresh lemon juice

¾ cup(s)

Peppermint leaves

¾ cup(s), chopped

Ice cube

½ cup(s)

Seltzer

3 cup(s), water

Lemon zest

1 Tbsp

Peppermint leaves

Instructions

  1. Combine sugar, lemon juice, and mint in saucepan. Stir over medium heat until sugar dissolves. Simmer 2 minutes and remove syrup from heat. Let cool.
  2. Strain out solids. Fill 4 glasses with ice cubes. Pour 3 tablespoons syrup and then 3/4 cup seltzer water in each glass.
  3. Top with lemon zest and garnish with mint leaves.
