Italian Sausage with Broccoli and White Beans

Use spicy or sweet sausage – whichever you prefer.
extra virgin olive oil1 tsp
broccoli florets2 cup(s), cut in bite-size pieces
cooked chicken sausage(s)3 oz, Italian variety, or turkey sausage, thickly sliced
uncooked onion(s)½ cup(s), chopped
garlic clove(s)2 medium clove(s), minced
canned cannellini beans½ cup(s), rinsed, drained
table salt1 pinch, optional
grated Parmesan cheese1 ½ Tbsp
crushed red pepper flakes1 pinch, optional
- Heat oil in small nonstick skillet over medium-high heat. Add broccoli, sausage, and onion; cover and cook over medium heat, stirring occasionally, until broccoli is almost tender, about 7 minutes.
- Add garlic; toss. Add beans, water, and a pinch salt (optional); cover and cook, stirring occasionally, until broccoli is tender and beans are hot, about 1 minute. Sprinkle with Parmesan and pepper flakes.
- Makes 1 serving.
