This one-serving, 20-minute main dish is ideal for a busy weeknight when you’re cooking for yourself. Cannellini beans have a wonderfully silky texture and nutty flavor that pairs well with the savory chicken sausage. Substitute spicy sauce for the sweet variety if you’d prefer a little spice in this entrée. If you find you have larger broccoli florets, cut them into smaller bite-sized pieces so they cook evenly. Instructions

  1. Heat oil in small nonstick skillet over medium-high heat. Add broccoli, sausage, and onion; cover and cook over medium heat, stirring occasionally, until broccoli is almost tender, about 7 minutes.
  2. Add garlic; toss. Add beans, water, and a pinch salt (optional); cover and cook, stirring occasionally, until broccoli is tender and beans are hot, about 1 minute. Sprinkle with Parmesan and pepper flakes.
  3. Makes 1 serving.
