Colorful and amazingly easy to prepare, this cheesy corn dip is a great option for your next get-together. By using sweet, crunchy, frozen corn and refrigerated salsa, you can make this year-round with ease. You could also sauté the corn in a large skillet coated with cooking spray to brown the kernels for added flavor and color. Stir in some drained pickled jalapeños for a little extra heat, using as much or as little as your taste buds can handle. Serve this dip with baked tortilla chips. If you have any leftover, serve it stuffed inside baked potatoes for an easy entrée.

Ingredients

Frozen corn

10 oz

Salsa

1½ cup(s), fresh, refrigerated

Shredded reduced fat Mexican-style cheese

¾ cup(s)

Scallions

2 Tbsp, chopped

Instructions

  1. Microwave frozen corn according to package directions; drain.
  2. Combine corn and salsa in a microwave-safe, 9-inch pie plate; cover and microwave on high power until bubbly, about 2 minutes.
  3. Sprinkle cheese over corn mixture; cover and let stand until cheese melts, about 5 minutes. Sprinkle with scallions and serve.
  4. Yields about 1/4 cup per serving.
