Perfectly ripe honeydew melon is a summer treat, and this cooling, ultra-refreshing drink puts it to delicious use. Honeydew can be a challenging melon to identify for peak ripeness. If it gives off a sweet, fragrant aroma near the stem, that’s a good sign that your melon is ripe. Also, ripe melons give a little when you press a finger onto the bottom and bounce back when you remove your finger. A melon with no give or aroma likely isn’t ripe. Enjoy this punch as is or pureed with kiwi in this ultra-refreshing punch. If you have extra melon, wrap slices in prosciutto for a sweet-and-salty appetizer.

Ingredients

Honeydew melon

4 cup(s), ball(s), seeded and cubed

Prepared low-calorie lemonade mix

1 cup(s), or other diet lemonade, prepared

Kiwifruit

3 large, peeled and chopped

Grape juice

1 cup(s), white-variety, unsweetened

Instructions

  1. Place melon chunks and 1/2 cup of lemonade in a large blender; cover and blend until smooth. Pour through a strainer into a large pitcher to remove any pulp and solids.
  2. Place remaining 1/2 cup of lemonade and chopped kiwi in blender; cover and blend until smooth. Again, pour through strainer into same large pitcher.*
  3. Add grape juice, stir well, and refrigerate at least 2 hours or up to 3 days. Serve over ice. Yields about 3/4 cup per serving.

Notes

*Alternatively, you can place all the melon, lemonade, and chopped kiwi in a very large food processor fitted with the chopping blade, and process until smooth. Pour through a strainer into a large pitcher and then proceed with the last instruction.
