Ingredients

Uncooked macaroni

6 oz, large variety

2% reduced fat milk

½ cup(s)

Reduced fat cheddar cheese

½ cup(s), shredded, sharp variety

Shredded part skim mozzarella cheese

¼ cup(s)

Buffalo wing sauce

2 Tbsp

Uncooked skinless boneless chicken breast

1 pound(s)

Dried seasoning mix

1 tsp, such as Nashville hot spice

Honey

1½ Tbsp

Canned chipotle peppers in adobo sauce

1 Tbsp

Cooked red bell pepper

1 cup(s), made with cooking spray, salt, and pepper

Cooked green bell pepper

1 cup(s), made with cooking spray, salt, and pepper

Cooked broccoli

1 cup(s), made with cooking spray, salt, and pepper

Instructions

  1. Boil macaroni for 10 minutes. Add a pinch of salt, stir and take off the heat. Drain water from the macaroni and set aside.
  2. In a medium pot over medium heat, combine milk, cheddar, mozzarella, and buffalo sauce. Stir until the sauce begins to thicken. Turn heat off, add the cooked macaroni, stir to combine, and set aside.
  3. Rub the chicken with the spice mix. In a nonstick skillet over medium heat, cook the chicken until 165F, about 3 to 5 minutes per side. Chop chicken and toss with honey and chipotle in adobo.
  4. Stir the chicken and veggies into the macaroni and serve.
  5. Serving size: 1/4 of macaroni (about 2 rounded cups)
