Grab the skewers and turn on your grill on to create this flavorful side dish made from charred onions, green peppers and mushrooms deliciously seasoned to enhance the freshness of the vegetables. The secret to even cooking of the kebabs is to make sure that the vegetables are uniformly and thickly cut. This also helps them stay on the skewers better. Choose a skewer that's flat to prevent the vegetables from swirling around. Also perfect for entertaining, you can multiply the ingredients to feed a larger crowd. You can also grill extras to have leftovers to make a grilled vegetable sandwich or salad the next day.

Ingredients

fresh parsley

¼ cup(s), finely minced

olive oil

1 tsp

garlic clove(s)

1 medium clove(s), finely minced

sea salt

½ tsp

green pepper(s)

2 medium, cut into 8 chunks each

grape tomatoes

12 medium

cremini mushroom(s)

12 medium, also known as baby bella, wiped clean, stems trimmed

Instructions

  1. Preheat grill to high.
  2. In a medium bowl, combine parsley, oil, garlic and salt; add vegetables and toss to coat. Thread vegetables onto 4 long metal skewers.*
  3. Grill, turning once, until tender and charred, about 6 to 10 minutes, depending on desired degree of doneness. Yields 1 kabob per serving.
