The secret to this flavorful pizza is in the sauce. Fresh tomato mixed with an array of seasonings that includes thyme, parsley, oregano, chile powder, salt and pepper makes the tasty base for this one-dish favorite. A hearty topping of beef and mushroom completes the dish. Haloumi, a firm creamy cheese from Cyprus, is made from a combination of sheep and goat milk. If you can’t find it, you can use 1/4 cup crumbled feta and 1/4 cup shredded mozzarella cheese. You can serve this pizza by itself or pair it with a tossed salad.

Ingredients

Olive oil

Uncooked onion

1 small, finely chopped

Uncooked 93% lean ground beef

½ pound(s)

Shiitake mushroom

4 oz, stems removed and caps thinly sliced

Tomato

1 medium, chopped

Fresh parsley

2 Tbsp, chopped

Fresh thyme

1 Tbsp, leaves

Fresh oregano

1 Tbsp, chopped

Ground cinnamon

1 tsp

Chili powder

½ tsp, ancho variety (or more to taste)

Table salt

½ tsp

Black pepper

¼ tsp

Whole wheat thin pizza crust

10 oz, pre-baked

Halloumi cheese

2 oz, shredded

Preheat oven to 400°F; adjust oven rack to lower third of oven. Spray large baking sheet with nonstick spray.

Heat oil in large nonstick skillet over medium heat. Add onion and cook, stirring frequently, until softened, about 3 minutes. Add beef and mushrooms and cook, breaking apart beef with wooden spoon, until beef is browned, about 5 minutes. Stir in tomato, parsley, thyme, oregano, cinnamon, chile powder, salt, and pepper; cook, stirring occasionally, until thickened, about 2 minutes.

Place pizza crust on baking sheet. Top crust evenly with beef mixture, then with haloumi. Bake until cheese melts and crust is crisp, 15−20 minutes. Let stand 5 minutes before serving. Cut into 6 wedges.
