Shelled pistachio nuts
Unsweetened shredded coconut
Dried chia seeds
Ground flaxseed meal
Green pumpkin seeds (pepitas)
- Preheat oven to 325°F. Line a large sheet pan with parchment paper.
- In a large mixing bowl, combine almonds, walnuts, pistachios, coconut flakes, chia seeds, flax meal, cinnamon, and sea salt. Drizzle maple syrup and oil over top, and mix well to evenly combine.
- Evenly spread onto prepared pan and bake for 20 minutes. Remove from oven, add pumpkin and sunflower seeds, and stir to combine. Return to oven and bake until seeds are golden and fragrant, 8 to 10 minutes.
- Remove and let cool completely. Store in an air-tight container.
