Pita bread dipped in egg whites and flavored with olive oil, basil, garlic, salt, and oregano and Parmesan cheese makes a quick appetizer or snack that has just a 5 minute prep time. The chips bake to a crispy doneness in about 15 to 17 minutes. It’s best to make these chips within an hour or two of serving. These chips make for a flavorful snack but can also be teamed with a yogurt or bean dip, or they can be served in lieu of bread with a main meal. They make a great side for a Mediterranean salad or Greek chicken.

Ingredients

Whole wheat pita

4 small, can substitute oat bran pita's

Egg whites

2 large

Olive oil

1 Tbsp

Garlic

3 clove(s), minced

Table salt

¼ tsp

Dried basil

¼ tsp

Dried oregano

¼ tsp

Grated Parmesan cheese

2 Tbsp

Instructions

  1. Preheat the oven to 300°F. Cut each pita into 4 triangles; split each triangle into two.
  2. Combine the egg whites, oil, garlic, salt, basil, and oregano in a small bowl. Brush over each of the pita wedges. Sprinkle with the cheese. Place the triangles on two baking sheets.
  3. Bake until the edges of the pita triangles are browned and the topping is set, 15–17 minutes. Transfer the chips to racks to cool completely. Yields about 4 chips per serving.
