We love the simplicity of this recipe - it's a perfect early morning treat! Try it with any fruit or cereal combinations you have on hand. Serving ricotta this way offers a welcome switch from yogurt, and the parfait resembles one you might enjoy on a vacation to Italy, or to France, where they serve fromage blanc, which is similar to the light, airy texture of ricotta layered with fresh fruit. Substitute banana for a mix of sugar sprinkled fresh blueberries, blackberries and raspberries for a sweeter option.

Fat free ricotta cheese

Peppermint leaves

4 piece(s), torn up

Ready to eat bran flakes

5 Tbsp, or All-Bran cereal

Strawberries

4 medium, hulled and sliced

Banana

½ large, peeled and cut into chunks

Instructions

  1. Stir together ricotta cheese and sugar in a small bowl; stir in mint.
  2. Spoon 3 tablespoons of cereal into a large wine glass or other clear, large glass; top with half of ricotta mixture. Layer with strawberries, remaining ricotta mixture and bananas; sprinkle with remaining cereal and serve.
