Frozen Watermelon Virgin Mojitos (Family Meals)

- Puree watermelon, in batches, in blender (you need about 6 cups puree). Pour 2 cups of puree into each of 2 standard-size ice-cube trays (16 cubes each); freeze until solid, about 4 hours or up to overnight. Chill remaining 2 cups watermelon puree in refrigerator.
- When ready to make mojitos, put one tray of watermelon cubes, 1 cup of chilled watermelon puree, 1 cup of soda, 6 tablespoons of lime juice, and 1 tablespoon of rum extract in blender; process until smooth.
- Stir 1½ tablespoons of mint into mojito mixture; pour into 4 glasses. Repeat with remaining ingredients to make total of 8 mojitos.
