Ingredients

Watermelon

9 cup(s), cubed seedless

Lemon lime diet soda

2 cup(s)

Fresh lime juice

12 Tbsp, (about 5 limes)

Rum extract

2 Tbsp

Fresh mint leaves

3 Tbsp, chopped

Instructions

  1. Puree watermelon, in batches, in blender (you need about 6 cups puree). Pour 2 cups of puree into each of 2 standard-size ice-cube trays (16 cubes each); freeze until solid, about 4 hours or up to overnight. Chill remaining 2 cups watermelon puree in refrigerator.
  2. When ready to make mojitos, put one tray of watermelon cubes, 1 cup of chilled watermelon puree, 1 cup of soda, 6 tablespoons of lime juice, and 1 tablespoon of rum extract in blender; process until smooth.
  3. Stir 1½ tablespoons of mint into mojito mixture; pour into 4 glasses. Repeat with remaining ingredients to make total of 8 mojitos.
  4. Per serving: 1 cup

Notes

You’ll need about 71 pounds of watermelon to get 9 cups of cubes.
