Make a big batch of these and keep them in the freezer to grab post-workout or for a sweet bite. See the note below how to make an optional layering effect with yogurt. Top with a sprinkle of hemp seeds or shredded coconut.

Ingredients

Powdered peanut butter

2 Tbsp

Water

1½ Tbsp

Banana

1 large, cut into twenty 1/4-inch-thick slices

Dark chocolate chips

¼ cup(s)

Instructions

  1. In a cup, mix powdered peanut butter with water.
  2. Arrange banana slices on a parchment-lined baking sheet. Spoon a rounded 1/2 tsp peanut butter mixture on one banana slice. Top with another banana slice, place on prepared pan, and repeat with remaining banana slices and peanut butter mixture. Freeze for at least 1 hour.
  3. Microwave chocolate chips until melted (or melt them in a double boiler). Carefully dip banana sandwiches halfway into melted chocolate, letting excess chocolate drip off, and place on prepared pan. Repeat with remaining banana sandwiches. Freeze for 30 minutes. Store in an airtight container.
  4. Serving size: 2 banana-peanut butter sandwiches

Notes

For a tasty and pretty layered-look, after step 3, dip banana bites into nonfat Greek or dairy-free yogurt so part of the chocolate is covered with yogurt. Freeze until set, about 30 minutes.
