To make life easy, especially when serving a family or brunch guests, you can cook this French toast before everyone shows up for breakfast. Place a wire rack over a baking sheet and set in a 200°F oven. As batches are done, place them on the rack; keep warm up to 30 minutes. If you’ve got fresh berries, serve them along with the warm sauce. Dust with cinnamon before serving, if desired. You could make a French toast breakfast bar if preparing this recipe for entertaining. Having other warm toppings like the strawberry sauce - warmed fruit, toasted nuts, a warmed syrup or butter - offers a great way to be sure the French toast stays hot and delicious on the plate.
Unsweetened frozen strawberries
2 cup(s), very coarsely chopped
4 large egg(s)
Whole wheat bread
8 slice(s), or multigrain bread
- To make sauce, combine strawberries and water in small saucepan and set over low heat. Cook, stirring occasionally, until berries are thawed and saucy, about 2 minutes. Remove saucepan from heat and stir in sugar until dissolved. Set aside.
- To make French toast, beat eggs, milk, vanilla, and cinnamon in large shallow bowl. Dip bread, one slice at a time, into egg mixture until well coated on both sides.
- Brush oil on griddle or in very large nonstick skillet and set over medium heat. Cook French toast, in batches, until deep golden, about 2 minutes per side, transferring to plate as it is done, covering to keep warm. Place 2 pieces of French toast on each of 4 plates and spoon sauce on top.
- Serving size: 2 slices French toast and about 1/4 cup sauce
