To make life easy, especially when serving a family or brunch guests, you can cook this French toast before everyone shows up for breakfast. Place a wire rack over a baking sheet and set in a 200°F oven. As batches are done, place them on the rack; keep warm up to 30 minutes. If you’ve got fresh berries, serve them along with the warm sauce. Dust with cinnamon before serving, if desired. You could make a French toast breakfast bar if preparing this recipe for entertaining. Having other warm toppings like the strawberry sauce - warmed fruit, toasted nuts, a warmed syrup or butter - offers a great way to be sure the French toast stays hot and delicious on the plate.

Ingredients

Unsweetened frozen strawberries

2 cup(s), very coarsely chopped

Water

¼ cup(s)

Sugar

1 Tbsp

Egg

4 large egg(s)

1% low fat milk

¾ cup(s)

Vanilla extract

1 tsp

Ground cinnamon

¼ tsp

Whole wheat bread

8 slice(s), or multigrain bread

Canola oil

2 tsp

Instructions

  1. To make sauce, combine strawberries and water in small saucepan and set over low heat. Cook, stirring occasionally, until berries are thawed and saucy, about 2 minutes. Remove saucepan from heat and stir in sugar until dissolved. Set aside.
  2. To make French toast, beat eggs, milk, vanilla, and cinnamon in large shallow bowl. Dip bread, one slice at a time, into egg mixture until well coated on both sides.
  3. Brush oil on griddle or in very large nonstick skillet and set over medium heat. Cook French toast, in batches, until deep golden, about 2 minutes per side, transferring to plate as it is done, covering to keep warm. Place 2 pieces of French toast on each of 4 plates and spoon sauce on top.
  4. Serving size: 2 slices French toast and about 1/4 cup sauce
