Ingredients

Olive oil

2 tsp

Red wine vinegar

½ tsp

Dijon mustard

½ tsp

Garlic clove

½ clove(s), finely chopped

Jennifer Fisher Spicy Salt

tsp, or Universal Salt

Black pepper

1 pinch(es)

Canned salmon

3 oz, drained

White onion

1 cup(s), chopped

Jalapeño pepper

1 medium, seeded and finely chopped

Cilantro

2 Tbsp, roughly chopped

Lime

½ item(s)

Avocado

¼ item(s)

Instructions

  1. In a medium bowl, whisk together the oil, vinegar, mustard, garlic, Spicy Salt, and black pepper. Add the salmon and mix until well combined. Season with additional Spicy Salt and black pepper, to taste.
  2. Add the white onion, jalapeno, and cilantro. Toss to combine. Squeeze the juice from the lime.
  3. Arrange the avocado on a plate and spoon the salmon on top.
  4. Serve with 1 oz plantain chips, if desired (add 5 points).
