This pale green pie is ideal for your St. Patrick’s Day celebration. It’s a breeze to prepare, can be made a day or two ahead, and is sure to garner rave reviews. The flavor falls somewhere between that of a key lime pie and lime chiffon pie. Greek yogurt intensifies the fruity tang of the lime juice, and a good bit of citrus zest lends softer floral notes. To firm up the pie, be sure to freeze it; you can eat it frozen (it’s delicious that way), but we recommend letting it stand a few minutes at room temperature to slightly soften.

Plain fat free Greek yogurt

Powdered sugar (confectioner's)

Lime zest

Fresh lime juice

2 Tbsp

Reduced fat cream cheese (neufchâtel)

2 oz, softened

Frozen lowfat whipped topping

Instructions

  1. In a large bowl, combine yogurt, sugar, lime zest and juice, and cheese; beat with an electric mixer at medium speed until well combined, about 1 minute. Add whipped topping and food coloring, if desired; beat at low speed just until combined. Spoon mixture into crust.
  2. Cover and freeze until firm, about 2 hours. Cut into 8 equal wedges; let stand at room temperature 5 to 10 minutes before serving.
  3. Serving size: 1 wedge
