Easy St. Paddy's Day lime pie
Plain fat free Greek yogurt
Powdered sugar (confectioner's)
Fresh lime juice
2 oz, softened
Frozen lowfat whipped topping
1⅓ cup(s), thawed
5 drop(s), green, plant-based or regular (optional)
Graham cracker crust
- In a large bowl, combine yogurt, sugar, lime zest and juice, and cheese; beat with an electric mixer at medium speed until well combined, about 1 minute. Add whipped topping and food coloring, if desired; beat at low speed just until combined. Spoon mixture into crust.
- Cover and freeze until firm, about 2 hours. Cut into 8 equal wedges; let stand at room temperature 5 to 10 minutes before serving.
