Apple
3 large, Gala or Granny Smith, peeled, diced
Shallot
10 Tbsp, chopped, minced, divided
Minced ginger
1 Tbsp
Orange juice
½ cup(s)
Apple cider vinegar
⅓ cup(s)
Dark brown sugar
½ cup(s)
Mustard seed
¾ tsp
Kosher salt
¾ tsp
Instructions

Combine all ingredients, except 2 Tbsp shallot, in a medium, heavy-bottomed saucepan; cook over medium heat, stirring often, until sugar melts, about 5 minutes.

Cover pan and cook until chutney is thick, 50 to 60 minutes. Remove from heat and let cool; stir in remaining 2 Tbsp shallot. Chill before serving, about 1 hour.
