3 large, Gala or Granny Smith, peeled, diced
10 Tbsp, minced, divided
Apple cider vinegar
Dark brown sugar
- Combine all ingredients, except 2 Tbsp shallot, in a medium, heavy-bottomed saucepan; cook over medium heat, stirring often, until sugar melts, about 5 minutes.
- Cover pan and cook until chutney is thick, 50 to 60 minutes. Remove from heat and let cool; stir in remaining 2 Tbsp shallot. Chill before serving, about 1 hour.
- Serving size: 1/4 cup.
