And the topping—a buttery oat-based streusel with pecans—only contains a hint of brown sugar. The trick to making this the easiest-ever version of the beloved holiday side is to use canned sweet potato puree. Seek out unsweetened puree, as many canned sweet potato products are loaded with sugar. You might have to visit a grocery store specializing in healthier options.

Instructions

  1. Preheat oven to 375°F. Coat a 2-quart casserole dish with cooking spray.
  2. Combine sweet potato puree, vanilla, cinnamon, ½ teaspoon salt, and eggs in a large bowl, stirring until well blended. Pour mixture into prepared casserole dish.
  3. Combine oats, pecans, flour, brown sugar, butter, and remaining ¼ teaspoon salt, tossing well. Sprinkle mixture evenly over sweet potato mixture. Bake at 375°F until filling is bubbly and topping is lightly browned, about 35 minutes.
  4. Serving size: ½ cup
