For those who prefer savory breakfast to sweet, this classic Central American plate of hearty goodness is hard to beat. It combines scrambled eggs (you can cook them sunny-side up, if you prefer), a warm corn tortilla, smoky mashed black beans, and fresh vegetable accompaniments. The recipe makes one plate but is easy to scale up to serve more people.

  1. In a small microwave-safe bowl, mash the beans with a fork to your desired consistency; stir in the paprika. Cover and microwave on High until thoroughly heated, 45 seconds to 1 minute.
  2. In a small nonstick skillet heated over medium-high or directly on a gas burner over medium-low, heat the tortilla until lightly charred, 30 seconds to 1 minute.
  3. Off the heat, coat the skillet with cooking spray and heat over medium-low. In a small bowl, whisk together the eggs and salt. Add the egg mixture to the skillet; cook, stirring occasionally, until the eggs are scrambled, 2 to 3 minutes. Arrange the eggs, tortilla, beans, tomato, onion, and avocado on a plate.
