This cornflake coating also works well on other vegetables.

Ingredients

Uncooked zucchini

1 medium, cut into 4 x 1/2-inch sticks (about 24)

Uncooked yellow summer squash

1 medium, cut into 4 x 1/2-inch sticks (about 24)

Reduced calorie mayonnaise

2 Tbsp

Cornflake crumbs

6 Tbsp

Instructions

  1. Preheat the broiler; spray a large baking sheet with nonstick spray. Combine the zucchini, yellow squash, and mayonnaise in a bowl until well coated. Place the cornflake crumbs in a zip-close plastic bag; add the zucchini and yellow squash in batches, shaking the bag to coat both sides.
  2. Arrange the vegetables in one layer on the baking sheet. Spray the top of the vegetables with nonstick spray. Broil 7 inches from the heat until the vegetables are tender and golden, about 3 minutes on each side.
