Quinoa has become a breakfast-bowl favorite, and for good reason: This flavorful whole grain is filling and cooks in just 20 minutes which makes it a nice alternative to oats. Here it’s prepared for big-time comfort with caramelized apples, brown sugar, and butter and will allow you to celebrate the flavors of fall anytime of year. Have fun with this recipe and explore your color options for this easy breakfast by using red quinoa instead of the traditional white variety. Or mix it up with different apples: Tart, glossy green Granny Smith or sweet Red Delicious varieties will give you different looks, flavors, and textures.

Uncooked quinoa

Unsalted butter

1 Tbsp, salted

Apple

2 medium, cored and chopped

Water

Fat free skim milk

½ cup(s)

Packed brown sugar

Ground cinnamon

Instructions

  1. Rinse quinoa well under cold running water. Set aside.
  2. Coat large skillet with nonstick spray; set over medium heat. When skillet is hot, add 1/2 tablespoon butter and cook until melted and beginning to sizzle. Add apples and cook, turning occasionally, until apples are soft and begin to caramelize, 5−10 minutes depending on variety; set aside.
  3. Add quinoa and water to medium saucepan and bring to boil over medium-high heat; boil 1 minute. Reduce heat to low, cover tightly, and simmer for 20 minutes. When quinoa is cooked (a white spiral will appear on each grain), remove from heat and fluff with fork. Add remaining 1/2 tablespoon butter, the milk, brown sugar, and cinnamon; stir to combine and fold in apples. Divide among 6 bowls.
