Creamy fruit-topped waffles
1% low fat cottage cheese
1 medium, peeled and chopped, or 1 cup chopped frozen unsweetened peaches
¾ cup(s), fresh, chopped, or drained canned pineapple in juice
Low fat frozen waffle(s)
- Place cottage cheese in small food processor or blender; pulse until almost smooth. Transfer to small bowl and stir in peach and pineapple.
- Prepare waffles according to package directions. Spoon about ½ cup fruit mixture over each waffle, drizzle with honey, and sprinkle with cinnamon.
- Serving size: 1 topped waffle and 1 teaspoon honey
