Is it a salsa? Is it a side? Is it a dip? Answer: yes, yes, and yes. This delish combo of beans, lots of crunchy fresh veg, and a tangy lime vinaigrette is a viral social media sensation for a reason. It takes a lot of chopping and a long list of ingredients but each one plays a role. Plus once you're done prepping, all it takes is some mixing, shaking, and stirring. Make a huge batch and keep it in the fridge for up to 5 days. We love to scoop it up with tortilla chips but you'll also find us spooning it over grilled chicken or steak, stuffing it into tacos or quesadillas, or eating it straight up as a sweet, tart, satisfying side dish to sausages.


Fresh lime juice

  1. In a jar, combine the lime juice, vinegar, olive oil, honey, garlic, chili powder, salt, and pepper. Seal the jar and shake it to combine.
  2. In a large bowl, combine the sweet peppers, red onion, corn, jalapeno, beans, cilantro, pickled jalapenos, 2 tbsp pickle brine, mango, and feta. Add the dressing and stir until well combined. Serve immediately or refrigerate, covered, for up to 5 days. Serve with the chips.
