Is it a salsa? Is it a side? Is it a dip? Answer: yes, yes, and yes. This delish combo of beans, lots of crunchy fresh veg, and a tangy lime vinaigrette is a viral social media sensation for a reason. It takes a lot of chopping and a long list of ingredients but each one plays a role. Plus once you're done prepping, all it takes is some mixing, shaking, and stirring. Make a huge batch and keep it in the fridge for up to 5 days. We love to scoop it up with tortilla chips but you'll also find us spooning it over grilled chicken or shrimp, stuffing it into tacos or quesadillas, or eating it straight up as a sweet, tart, satisfying side dish to steak.

Ingredients

Fresh lime juice

Red wine vinegar

Olive oil

Honey

Garlic clove

Red bell pepper

1 medium, seeded and finely chopped

Yellow bell pepper

1 medium, seeded and finely chopped

Red onion

½ cup(s), minced

Frozen corn

½ cup(s), thawed

Jalapeño pepper

2 medium, seeded and finely chopped

Canned pinto beans

1½ cup(s), rinsed and drained

Canned black beans

1½ cup(s)

Cilantro

¼ cup(s), finely chopped

Pickled jalapeno peppers

¼ cup(s), chopped, finely chopped, plus 2 tbsp pickle brine

Mango

¼ cup(s), finely chopped

Reduced fat feta cheese

Instructions

  1. In a jar, combine the lime juice, vinegar, olive oil, honey, garlic, chili powder, salt, and pepper. Seal the jar and shake it to combine.
  2. In a large bowl, combine the sweet peppers, red onion, corn, jalapeno, beans, cilantro, pickled jalapenos, 2 tbsp pickle brine, mango, and feta. Add the dressing and stir until well combined. Serve immediately or refrigerate, covered, for up to 5 days.
