This delish combo of beans, lots of crunchy fresh veg, and a tangy lime vinaigrette is a viral social media sensation for a reason. It takes a lot of chopping and a long list of ingredients but each one plays a role. Plus once you're done prepping, all it takes is some mixing, shaking, and stirring. Make a huge batch and keep it in the fridge for up to 5 days. We love to scoop it up with tortilla chips but you'll also find us spooning it over grilled chicken or shrimp, stuffing it into tacos or quesadillas, or eating it straight up as a sweet, tart, satisfying side dish to steak.
