This delish combo of beans, lots of crunchy fresh veg, and a tangy lime vinaigrette is a viral social media sensation for a reason.

Ingredients

Fresh lime juice

¼ cup(s)

Red wine vinegar

1 Tbsp

Olive oil

1 Tbsp

Honey

1 tsp

Garlic clove

1 clove(s), grated

Chili powder

½ tsp

Table salt

½ tsp

Black pepper

¼ tsp

Red bell pepper

1 medium, seeded and finely chopped

Yellow bell pepper

1 medium, seeded and finely chopped

Red onion

½ cup(s), chopped, finely

Frozen corn

½ cup(s), thawed (or fresh kernels)

Jalapeño pepper

2 medium, seeded and finely chopped

Canned pinto beans

1½ cup(s), rinsed and drained

Canned black beans

1½ cup(s), rinsed and drained

Cilantro

¼ cup(s), finely chopped

Pickled jalapeño peppers

¼ cup(s), chopped, finely (plus 2 tbsp pickle brine)

Mango

¼ cup(s), finely chopped

Crumbled feta cheese

½ cup(s)

Instructions

  1. In a jar, combine the lime juice, vinegar, olive oil, honey, garlic, chili powder, salt, and black pepper. Seal the jar and shake it to combine.
  2. In a large bowl, combine the sweet peppers, red onion, corn, jalapeño, beans, cilantro, pickled jalapeños, 2 tbsp pickle brine, mango, and feta. Add the dressing and stir until well combined. Serve immediately or refrigerate, covered, for up to 5 days.
  3. Serving size: a rounded 1/2 cup

Notes

Make a huge batch and keep it in the fridge for up to 5 days. Scoop it up with tortilla chips, spoon it over grilled chicken or shrimp, stuff it into tacos or quesadillas, or eat it straight up as a side dish to steak.
