If you love dark chocolate, you're bound to love these cookies. Peanut butter is chocolate’s long-time best friend and in these treats it compliments chocolate’s richness giving each bite even more of an indulgent taste. No baking is required for these little goodies and they only take about 15 minutes to mix up. They’re best enjoyed when served frozen. Let them sit at room temperature for 10 minutes before serving if you prefer your frozen desserts on the softer side. You can easily double or triple the recipe to make ahead and keep them on hand. Transfer them from the wax the paper and store in freezer safe container or plastic zip top bag.

Ingredients

Fat free skim milk

¼ cup(s)

Unsweetened cocoa powder

2 Tbsp

Sugar

2 Tbsp

Chunky peanut butter without salt

¼ cup(s)

Uncooked old fashioned rolled oats

1 cup(s)

Canola oil

2 tsp

Instructions

  1. Mix milk, cocoa powder and sugar in a small saucepan over low heat.
  2. Bring to a boil and then remove from heat. Add peanut butter and stir until melted.
  3. Stir in oatmeal and oil.
  4. Drop 16 spoonfuls of batter onto a baking sheet lined with wax paper. Freeze for at least four hours; they are better the day after you make them. Yields 1 cookie per serving.
