- Preheat the oven to 350°F. Lightly coat 2 holes of a nonstick standard muffin pan with cooking spray (or use cupcake liners).
- In a small bowl, whisk together the cake mix, egg, water, and oil into a smooth batter. Evenly divide the batter among the prepared muffin holes. Bake until a toothpick inserted into the center of a cupcake comes out clean, 12 to 14 minutes. Allow the cupcakes to cool before decorating.
- To make the topping: Stir together the whipped topping and peanut butter powder in a small bowl; divide the topping over the cooled cupcakes and sprinkle each with half of the Fiber One Bar pieces.
