Chocolate-drizzled oranges in strawberry cream

Getting in your fruit each day is simple, especially when it is served with cream and drizzled with chocolate! Here, a luscious sauce is made with a pureed mixture of strawberries and whipped topping and comes together on the stovetop in about 2 to 3 minutes thanks to the thickening power of cornstarch. It’s best enjoyed chilled so plan to make it a few hours before you want to serve it. We’ve added a touch of orange liqueur to brighten the flavor, but you could substitute fresh orange juice if you prefer. For a pretty presentation, arrange each serving in a champagne coupe or martini glass.

Strawberries

Orange-flavored liqueur

½ fl oz, about 1 tbsp

Light aerosol whipped cream

1 Tbsp

Cornstarch

2 tsp

Orange

2 medium, navel, peeled and sliced 1/4-inch thick

Chocolate syrup

1 tsp

Peppermint leaves

4 piece(s), or 2 mint sprigs

Instructions

  1. In a blender or food processor, puree strawberries, sugar, liqueur and whipped non-dairy topping.
  2. In a small saucepan, combine cornstarch with 3 tablespoons cold water; stir in strawberry mixture. Cook over medium heat, stirring constantly, until mixture boils and thickens, 2-3 minutes. Remove from heat and cool slightly. Refrigerate, covered, until chilled, 1-2 hours.
  3. Pour strawberry cream onto 4 dessert plates. Arrange orange slices on top. Drizzle with chocolate syrup and serve, garnished with mint.
