Our version of this classic is updated and brightened with freshly grated orange zest and turned into fun-to-eat stacks. Thanks to store-bought chocolate wafers you can whip these show-stopping treats up without turning on your oven. These easily double to feed a crowd. For a pretty presentation, top each stack with a few thin slices of strawberry and a mint leaf just before serving. We recommend assembling and chilling them up to 4 hours in advance. But if you need a bigger jump-start you can make the filling 2 to 3 days ahead and then make the stacks the day you plan to serve them.
Ingredients
Fat-free instant chocolate pudding and pie filling mix
8 oz
Orange zest
0.5 tsp
Fat free whipped topping
0.333 cup(s)
Fat free whipped topping
3 Tbsp
Chocolate wafer

Instructions

Stir together the chocolate pudding and orange zest in a medium bowl. Fold in 1/3 cup of the whipped topping.

Spread 1 tablespoon of the pudding mixture on each of the cookies. Stack 4 cookies and place on a dessert plate. Repeat to make a total of 4 stacks. Cover loosely with plastic wrap and refrigerate until the cookies soften, at least 4 hours or up to overnight. Top each stack with a dollop of the remaining whipped topping and sprinkle with the remaining orange zest. Serve at once. Yields 1 stack per serving.
