Swiss rolls are easier to make than you might think. The cake bakes in about 5 minutes. The trick is to roll up the cake in a kitchen towel while it's still warm. As the cake cools, it forms the rounded shape you need. Then you unroll the cake, fill it with the cream and fruit, and roll it right back up!. This impressive dessert is ready in less than 11/2 hours, and most of that time is for cooling. We like this cake with frozen cherries for ease, but if it's cherry season, use fresh ones! You can also fill it with your favorite berry or combination of berries instead of the cherries.

Cooking spray

4 spray(s)

All-purpose flour

½ cup(s)

Unsweetened cocoa powder

¼ cup(s)

Baking powder

1 tsp

Kosher salt

½ tsp

4 large egg(s)

½ cup(s)

Black coffee

2 Tbsp

Vanilla extract

1 tsp

Light butter

2 Tbsp, melted

Reduced fat cream cheese

½ cup(s), softened

Powdered sugar (confectioner's)

2 tsp

Frozen unsweetened dark sweet cherries

½ cup(s), thawed, drained, and coarsely chopped

  1. To make cake, preheat oven to 325°F. Coat jelly roll pan with nonstick spray and line with parchment paper. In small bowl, whisk flour, cocoa, baking powder, and salt. Using electric mixer, in medium bowl, beat eggs, sugar, coffee, and vanilla until light in color. Add butter and whisk until combined. Add dry ingredients and, using spatula, fold just until combined and smooth with no lumps. Spread batter in prepared pan. Bake until cake is set and no longer shiny, about 5 to 8 minutes.
  2. Immediately coat top of cake with nonstick spray and cover with parchment. Starting from 1 long edge (with parchment on top and bottom), roll cake up. Let roll cool to keep its shape, about 30 minutes.
  3. To make filling, using plastic spatula, in small bowl, mix cream cheese and powdered sugar until smooth.
  4. Carefully unroll cake and remove parchment on top. Spread filling over cake. Sprinkle cherries on top. Gently reroll cake in same direction, removing parchment on bottom as you roll. Wrap roll in clean sheet of parchment and roll up tightly. Freeze roll for 10 minutes. Remove parchment paper and cut roll into 10 (11/2-inch) slices.
