Inspired by classic cheesecake, these bars include all the components you’d expect in a traditional slice—a chocolate wafer crust and a sweet creamy filling. Their rich flavor makes them worth every bite. But here the crust is pressed into a 9-inch baking dish and top with the filling instead of being assembled in a spring-from pan. You can serve them once they’ve cooled or make them ahead and store in the refrigerator. These luscious treats need little adornment but feel free to gussy them up and top each bar with fresh berries, whipped topping and sprigs of fresh mint before serving.

Milk chocolate chips

Reduced fat cream cheese (neufchâtel)

Liquid egg substitute

Unsweetened cocoa powder

Instructions

  1. Preheat oven to 325°F. Coat a 9-inch square baking dish with cooking spray.
  2. Melt chocolate chips in a double boiler and let cool slightly. Place wafers (or chocolate graham crackers) in a plastic bag and crush with a rolling pin to form fine crumbs; sprinkle over bottom of prepared pan.
  3. With an electric mixer, whip egg whites until soft peaks form. Slowly add 1/4 cup of sugar; beat until stiff and set aside. In another bowl, beat cheese with remaining sugar until smooth. Add egg substitute; beat until smooth and scrape down the sides as needed. Add cocoa and cooled chocolate; beat until smooth. Add vanilla and sour cream; beat until smooth and scrape down the sides as needed. Fold in egg whites. Pour into prepared pan and bake until firm, about 45 minutes. Cool and slice into 12 pieces.
