Chocolate and vanilla banana cream parfaits

These parfaits are a wonderful combination of creamy pudding and banana chunks with a cookie topping. Almost like mini crustless cream pies. You can get a jumpstart making these ahead by preparing the puddings in advance. Wait until right before serving to assemble though to keep preserve the color of the banana slices and to prevent the graham cracker crumbs from becoming soggy. For more banana flavor, substitute banana-flavored pudding for the vanilla variety. You could also swap out the banana in favor of strawberries, raspberries or blueberries. Garnish with a sprig of mint or dust the whipped topping with cocoa for pretty presentation.

Vanilla pudding prepared with skim milk

Banana
2 medium, cut into small chunks
Prepared chocolate pudding with skim milk
2 cup(s)
Aerosol whipped cream
½ cup(s)
Graham cracker crumbs
5⅓ Tbsp
Unsalted dry roasted peanuts
8 tsp, chopped
Instructions

Place 1/4 cup vanilla pudding in each of 8 small glass bowls or parfait glasses; top each with a layer of banana chunks. Top banana with 1/4 cup chocolate pudding; cover tightly with plastic wrap and refrigerate until cold.

When ready to serve, remove plastic wrap; sprinkle each with 2 teaspoons graham cracker crumbs and 1 teaspoon peanuts. Spray each dessert with 1 tablespoon whipped cream; serve immediately. Yields 1 parfait per serving.
