Create these gourmet-inspired potato chips at home without the need to fry them. The flavors from the pungent parmesan cheese and fresh chopped chives elevate the crispy snack into something a little more special. Try sprinkling the hot chips with freshly cracked black pepper for a little heat. To make them, use a mandoline slicer to slice the potatoes thin enough to be "chips" so they’ll get crisp during baking. If you don’t have a mandoline slicer, you can find one at either a big box store, specialty shop and kitchen store. The chips will brown at different rates so watch them carefully while they bake, and quickly remove individual chips from the oven as they become golden.

Uncooked potato

Olive oil

Grated Parmesan cheese

3 Tbsp

Chives

3 Tbsp, minced

Table salt

Instructions

  1. Preheat oven to 400°F.
  2. Scrub potato with a brush. Cut potato lengthwise into very thin slices using a mandoline slicer.
  3. Combine potato slices and oil in a large bowl. Add cheese, chives, and salt and toss gently to coat.
  4. Arrange potato slices in a single layer on baking sheets coated with cooking spray. Bake at 400°F for 18 to 20 minutes or until golden. Yield: 7 servings (serving size: 9 to 10 chips).
