This lightened up Reuben sandwich is piled with grilled chicken breast, sauerkraut, Swiss cheese, and thousand island dressing, and it hits all the marks. The instructions are fairly simple, but be sure to really drain that sauerkraut. If you've got some free time, you can also make your own batch to really personalize the sandwich (the store-bought kind works, too!) This dish is perfect for a midday meal.

Ingredients

Cooked skinless boneless chicken breast

2 oz, thinly sliced

Sauerkraut

⅓ cup(s), drained, well-drained

Sourdough bread

2 slice(s), small

Light thousand island salad dressing (10 calories per tsp)

1 Tbsp

Lucerne Reduced fat Jarlsberg lite Swiss cheese

Instructions

Spread the dressing on 1 slice of bread. Top with 1 slice of cheese, chicken, sauerkraut, then remaining slice of cheese.

Place remaining slice of bread on top and bake in 425°F oven or toaster oven until cheese melts.
