This hearty hot cereal is a great way to get you up and going and will keep you satisfied all morning long. It's a terrific make-ahead porridge that you can reheat in the microwave for breakfasts for the family practically an entire week. Add a little warmed nonfat milk to your cereal if you prefer, or go for an alternative nut, seed, or grain milk if you are dairy-free. Change up the dried fruit here or lose the sugar and add a touch more maple syrup to the blend. This is so versatile, the variations are only limited by your imagination.

Water

Table salt

½ tsp, divided

Uncooked bulgur

Pumpkin pie spice

1 tsp, divided

Uncooked old fashioned rolled oats

3 cup(s)

Dried apricot halves

Dried cranberries

Packed brown sugar

1 large, red-skinned, diced

Maple syrup

6 tsp, warmed

Instructions

  1. Bring 2 cups water and 1/4 teaspoon salt to a boil in a medium saucepan; stir in bulgur and 1/2 teaspoon pumpkin pie spice. Bring to a boil; reduce heat to low and simmer, covered, until bulgur is cooked, about 8 to 10 minutes. Remove from heat, cover and let stand for 3 minutes; fluff with a fork.
  2. Meanwhile, bring remaining 5 cups water and 1/4 teaspoon salt to a boil in another medium saucepan; stir in oats and 1/2 teaspoon pumpkin pie spice. Reduce heat to medium-low, and cook, stirring frequently until cooked, about 10 minutes; remove from heat.
  3. Add bulgur, apricots, cranberries and sugar to oats and stir to combine. Serve cereal topped with diced pear and a drizzle of syrup. Yields about 3/4 cup cereal, a scant tablespoon pear and 1/2 teaspoon syrup per serving.
