uncooked 93% lean ground beef6 oz, (7% fat or less)
canned diced tomatoes¾ cup(s), with chiles
fat free canned refried beans⅔ cup(s)

reduced-fat cheddar cheese4 oz, (about 1/2 cup), or Mexican cheese blend, shredded
uncooked scallion(s)3 medium, sliced (about 1/2 cup)
jalapeño pepper(s)2 medium, seeded and minced
- Preheat broiler.
- Arrange tortilla chips very close together on baking sheet in single layer; set aside.
- Heat oil in large nonstick skillet over medium heat. Add beef and cook, breaking it up with side of wooden spoon, until browned, about 4 minutes. Stir in tomatoes, beans, oregano, and salt; cook, stirring occasionally, until heated through, about 5 minutes.
- Spoon beef mixture evenly over chips; sprinkle evenly with Cheddar. Broil about 5 inches from heat until cheese is melted, about 30 seconds. Sprinkle with scallions and jalapeños.
