Ingredients

Baked low fat tortilla chips

32 chip(s), corn variety

Canola oil

2 tsp

Uncooked 93% lean ground beef

6 oz, (7% fat or less)

Canned diced tomatoes

¾ cup(s), with chiles

Fat free refried beans

Dried oregano

½ tsp

Table salt

½ tsp

Reduced fat cheddar cheese

4 oz, (about 1/2 cup), or Mexican cheese blend, shredded

Scallions

3 medium, sliced (about 1/2 cup)

Jalapeño pepper

2 medium, seeded and minced

Instructions

  1. Preheat broiler.
  2. Arrange tortilla chips very close together on baking sheet in single layer; set aside.
  3. Heat oil in large nonstick skillet over medium heat. Add beef and cook, breaking it up with side of wooden spoon, until browned, about 4 minutes. Stir in tomatoes, beans, oregano, and salt; cook, stirring occasionally, until heated through, about 5 minutes.
  4. Spoon beef mixture evenly over chips; sprinkle evenly with Cheddar. Broil about 5 inches from heat until cheese is melted, about 30 seconds. Sprinkle with scallions and jalapeños.
  5. Per serving: 4 garnished chips

Notes

This is the perfect finger food to share while getting the grill going for a barbecue get-together. If you like things really spicy, add additional jalapeños or use pickled jalapeños instead of the fresh ones.
