Yes, that's right, this dessert recipe calls for whole-wheat couscous, and once you try it, you'll soon see why. Couscous actually adds great texture and lots of satisfaction to this pretty parfait. Prep is super-easy thanks to the convenience of the microwave as well as using store-bought banana pudding and pie mix, but you get lots of fresh fruit in this dessert thanks to the bananas and strawberries. Mint sprigs lend themselves as the perfect garnish and pop of color and help tie everything together. Feel free to serve these gorgeous-looking parfaits year-round by using whichever fruits are in season.

Mineral water

Uncooked whole wheat couscous

¼ cup(s)

Fat-free sugar-free instant banana pudding and pie filling mix

1 oz

Fat free skim milk

2 cup(s), cold

Banana

1 large, ripe, sliced

Strawberries

1 cup(s), sliced

Peppermint leaves

oz, sprigs (for garnish)

Instructions

  1. Bring water to a boil in a microwave-safe bowl in microwave. Carefully remove from microwave and stir in couscous. Cover with plastic wrap and let stand 5 minutes until couscous is tender.
  2. Meanwhile, prepare pudding according to package directions using fat-free milk. Stir in couscous (it is okay if couscous is still warm). Let stand 5 minutes until pudding is set.
  3. To make parfaits, layer about 2 tablespoons of pudding, then 2 tablespoons of bananas, 2 tablespoons of pudding and then 2 tablespoons of strawberries in each of 4 tall parfait or other tall thin glasses. Repeat layers once. Garnish with mint sprigs if desired. Serve immediately. Yields 1 parfait per serving.
