The ricotta filling, made with sugar, vanilla extract, bananas, and mini chocolate chips, can be prepared in advance, refrigerated for a day, and then stuffed into the cones right before serving. Part skim ricotta cheese

Vanilla extract

¼ tsp

Banana

2 small, peeled and diced

Mini chocolate chips

2 Tbsp

Low fat frozen waffle

Instructions

Stir together ricotta, sugar, vanilla, bananas and chocolate chips in a medium bowl; set aside.

Toast waffles. Immediately spoon 3/4 cup of cheese mixture over each waffle. Roll into a cone shape and serve immediately. Yields 1 filled waffle per serving.
