These tacos were created courtesy of Hungry Girl. If you're a taco lover, and we have a feeling that most of you are, she says that "you'll FREAK over these!!!" And we really couldn't agree more. They're perfect to make for one as a fun lunch or dinner. But of course you can easily scale up the ingredients if you're having people over or you wouldn't mind some leftovers. These tacos feature sliced onions and red peppers, chicken, avocado, iceberg lettuce, cheddar cheese, sour cream, salsa, and fresh cilantro for a delightful homemade treat. The best part is they come together in just one skillet, which makes cleanup nice and quick.


Ingredients
Cooking spray
4 spray(s)
Onion
½ small, sliced
Red bell pepper
¼ large, sliced
Uncooked skinless boneless chicken breast
4 oz, cut into strips
Corn tortilla
2 tortilla(s), small
Table salt
⅛ tsp, or to taste
Black pepper
⅛ tsp, or to taste
Avocado
⅛ item(s), sliced
Iceberg lettuce
½ cup(s), chopped, chopped
Shredded fat free Cheddar cheese
2 Tbsp, or Monterey Jack cheese
Fat free sour cream
2 Tbsp
Salsa
1 Tbsp
Cilantro
1 tsp, fresh, chopped
Instructions

Coat a skillet with cooking spray; set over medium heat. Saute onion for 2 minutes. Add red pepper; sauté for 2 minutes more (vegetables should still be a little crisp). Remove vegetables from pan and place in a small bowl. Saute chicken in same skillet until cooked through, about 4 to 5 minutes; add to vegetable bowl.

Heat tortillas in same skillet for 20 seconds on each side; remove to a plate.

Season vegetable-chicken mixture with salt and pepper; divide among tortillas. Top each with 1/2 of avocado, lettuce, cheese, sour cream, salsa and cilantro; fold up and serve. Yields 2 tacos per serving.
