Here’s a really quick, light, summery meal that you'll find yourself making over and over again. It comes together in 10 minutes and requires no cooking, which is perfect after a hot, busy day out and about. This recipe is designed to serve two, but you can easily scale up the ingredients if you're having more people over or need it as a side for a dinner party. The cherries and celery are an irresistible combination, and beautifully complement the spinach, chives, thyme, and goat cheese. A sprinkling of chopped dry-roasted pistachios helps tie everything together right before serving, but feel free to use whatever nuts you have on hand.



10 oz, Bing, pitted

Uncooked celery

2 rib(s), medium, diced

Fat-free balsamic vinaigrette dressing

3 Tbsp


2 Tbsp, minced

Fresh thyme

1 Tbsp, stemmed

Black pepper

¼ tsp

Fresh baby spinach

Reduced-fat goat cheese

Salted dry-roasted pistachio nuts

2 Tbsp, chopped


  1. Mix cherries, celery, dressing, chives, thyme, and pepper in a large bowl until the cherries are well coated.
  2. Add spinach; crumble in goat cheese. Toss very gently to coat.
  3. Divide between two plates. Sprinkle each serving with half the chopped pistachios.
  4. Serving size: 2 1/2 cups.
