Baby spinach salad with fresh cherries and goat cheese
10 oz, Bing, pitted
2 rib(s), medium, diced
Fat-free balsamic vinaigrette dressing
2 Tbsp, minced
1 Tbsp, stemmed
Fresh baby spinach
Reduced-fat goat cheese
Salted dry-roasted pistachio nuts
2 Tbsp, chopped
- Mix cherries, celery, dressing, chives, thyme, and pepper in a large bowl until the cherries are well coated.
- Add spinach; crumble in goat cheese. Toss very gently to coat.
- Divide between two plates. Sprinkle each serving with half the chopped pistachios.
- Serving size: 2 1/2 cups.
