Baby Spinach Salad with Fresh Cherries and Goat Cheese

Here’s a really quick, light, summery meal.
cherries10 oz, Bing, pitted
uncooked celery2 rib(s), medium, diced
fat-free balsamic vinaigrette dressing3 Tbsp
chives2 Tbsp, minced
fresh thyme1 Tbsp, stemmed
black pepper¼ tsp
fresh baby spinach4 cup(s)
reduced-fat goat cheese3 oz
salted dry-roasted pistachio nuts2 Tbsp, chopped
- Mix cherries, celery, dressing, chives, thyme, and pepper in a large bowl until the cherries are well coated.
- Add spinach; crumble in goat cheese. Toss very gently to coat.
- Divide between two plates. Sprinkle each serving with half the chopped pistachios.
- Serving size: 2 1/2 cups.
