Cherries

10 oz, Bing, pitted

Celery

2 rib(s), medium, diced

Fat free balsamic vinaigrette dressing

3 Tbsp

Chives

2 Tbsp, minced

Fresh thyme

1 Tbsp, stemmed

Black pepper

¼ tsp

Baby spinach

4 cup(s)

Reduced fat soft goat cheese

3 oz

Salted dry-roasted pistachio nuts

2 Tbsp, chopped

Instructions

  1. Mix cherries, celery, dressing, chives, thyme, and pepper in a large bowl until the cherries are well coated.
  2. Add spinach; crumble in goat cheese. Toss very gently to coat.
  3. Divide between two plates. Sprinkle each serving with half the chopped pistachios.
  4. Serving size: 2 1/2 cups.
