A mix of potatoes like red, yellow, and purple makes for a very festive dish, but you can also prepare this recipe with any variety you have available.

Ingredients

Uncooked baby potatoes

1¼ pound(s), assorted colors, scrubbed and halved

Olive oil

1 Tbsp

Fresh lemon juice

1½ Tbsp

Lemon zest

1 tsp

Fresh thyme

2 tsp, chopped

Table salt

½ tsp

Black pepper

¼ tsp

Paprika

¼ tsp, smoked variety

Instructions

  1. Put potatoes in medium saucepan and cover with water by 2 inches; bring to boil. Reduce heat and simmer until tender, 15–18 minutes; drain.
  2. Place potatoes in medium bowl and add oil, lemon zest and juice, thyme, salt, pepper, and paprika. Toss to coat.
  3. Serving size: ¾ cup
