Asparagus and cottage cheese frittata
4 spear(s), medium, trimmed and cut into 1/2-inch pieces
2 large egg(s)
1 Tbsp, chopped fresh
Fat free cottage cheese
1 slice(s), toasted
- Preheat broiler.
- Place asparagus in small microwaveable bowl, cover with wax paper, and microwave on High until crisp-tender, about 30 seconds. Drain.
- Whisk together eggs, basil, salt, and pepper in small bowl. Heat oil in small ovenproof nonstick skillet over medium heat. Add egg mixture and cook, lifting edges frequently with spatula to let any uncooked egg flow underneath, until almost set, about 4 minutes. Sprinkle with asparagus and spoon cottage cheese on top.
- Place skillet under broiler 5 inches from heat and cook until eggs are set, about 2 minutes. Serve with toast.
